Is there a way to compress everything into one sort of, selection in the homemade levels menu so you can't jump to levels in a series of levels your making. If you understand please help.

What you want to do is go to the level options, and set the next level feild on all your levels in a chain. SO, MyLevel1.J2L would have the next level setting of MyLevel2.J2L, and MyLevel2.J2L would have the next level setting of MyLevel3.J2L, and so on. Then, check the check box that says somthing like "Hide this level in the homecooked levels" on all the levels but MyLevel1.J2L. That should do it.

Also, for the following levels not to be selectable, there's a field called something like "Do not show in Home Cooked Level list".
