I read a totoutiral on how to make your own demos, it involved using the Jazz2 spy window but now how do I stop the stupid Spy window coming up whenever I open Jazz2?

Stilletto is correct. You enabled it using commands, and it will not come off unless you disable it using the commands. Type -nospy after the jazz2.exe program so it looks like "C:\Jazz2\Jazz2.exe -nospy" or whatever the path is.
