Is there an editor for mac if so where can I download also How do I add a custom level to a new server game.

You can emulate the PC one though.

Only if you have an x86 emulator and an OS, like virtual pc. You can't just emulate one (yet).

I still wonder why the Jazz2 MAC version doesn't come with a JCS though.

The company who made it was pressed for time and did not have time to convert JCS to Mac.
